A great item for the Easter menu!
- 6 eggs Eggs, Whole
- 1 tbsp Mayonnaise, light
- 1/4 tsp Salt
- 1/2 tsp Paprika
- 1/2 tsp Pepper
- 2 tsp Spicy Brown Mustard
- Hard boil eggs and peel.
- Cut eggs in half, remove yolks and place into a bowl. Put egg whites onto a plate.
- Mix yolks with mayo, mustard (I like whole grain stone ground), salt, and pepper.
- Fill each egg white with 1/12 of the yolk mixture.
- Sprinkle paprika on top.
YIELDS: 2 servings
PER SERVING: 1 lean, ~3 condiments (using 1 tbsp light mayo as 2 condiments since we don’t get a healthy fat with whole eggs).
